This is how blanco Tequila should smell with unadorned, raw, but fetching peppery/dill-like aromas, scents of lanolin, palm oil, sand, minerals and slate. The palate entry is semidry, intensely sap-like and honeyed; at midpalate the taste profile displays a satiny texture and a robust, herbal, mildly salty flavor.

The aroma is on the sweet side, mixing honeyed and grassy notes with a touch of fresh pear. It’s sweet and fruity on the palate as well, with a light, silky feel and a flourish of baking spice on the crisp finish.

Clear, but with a few insignificant suspended particles. the nose of toast and buttered popcorn is unusual and idiosyncratic. After seven minutes of airing, the buttery scent expands to bacon fat and sauteed almonds. The flavor is dry, very oily, and well endowed at palate entry; the midpalate adds tastes of black pepper, tar and dried herbs, and the aftertaste features a unique oiliness that is irresistible. This is one of the most singular tequila bouquets of the last ten years, and is the most exciting silver to be released in the last three years.

Light gold. Moderately full-bodied. Vanilla, caramel, honey, apple, minerals. Rich texture. Bold, yet soft flavors and rich brown spices cot the palate. Quite a deep, plush drink. A sharpness to the finish.

Speaking of definitive tequilas, Don Julio Blanco is my standard-bearer for blanco, period, case closed. There is no finer, more ideally herbal and vegetal and salty and sensually pleasing blanco/silver in the marketplace. When I’m teaching about tequila, I routinely employ DJ Blanco as my standard for blanco. ’Nuff said?

Pure and pewter colored. The peppery/dill-like aroma jumps from the copita and compels my sense of smell to dive back into it; further air contact stimulated waxy scents of lanolin and palm oil, along with dessert-like aromas of sand, minerals, slate, and succulent plant blossoms; how blanco tequila should smell, unadorned, raw, yet supremely fetching. The palate entry is semi-dry, intensely sap-like, and even honeyed; at the midpalate stage the taste profile turns as much to the satiny texture as to the robust, herbal, mildly salty flavor. A blanco that deserves to be in every backbar in every tequila joint in the world.
