Burnished gold in color. There’s a candied quality to the nose of this bottling, but it’s quickly followed by oak, sherry, and forest-after-a-storm aromas. The body is huge and silken, and the palate so complex it’s hard to know where to begin. The masculine flavors are first on the scene — ether, oak, licorice, tobacco — but the backdrop is fruity/spicy — raisins, cinnamon, allspice, nutmeg. All this is intricately woven together in harmony. The finish is very long and very warm. Quite simply a classic.

Most years, The Macallan has released an 18-year-old, at 43 vol., in which some malt lavers find the most robust interplay of the estery whisky and the dry oloroso maturation. These are vatted to offer continuity of character, but inevitably they vary slightly. There is not a full point between any of them [vintages from 1963 to 1978].

Full reddish amber appearance. Moderately full-bodied. Walnuts, sweet wood, vanilla, citrus. Nutty oloroso notes dominate nose. Rich and powerful palate with a weighty presence and rounded mouthfeel. Finish is long and lengthy with a smoky, nutty quality. A rich digestif style.

This Speyside single malt is matured in Sherry oak casks from Jerez, Spain, for a minimum of 18 years. The amber spirit has a big, warm caramel flavor, finishing with a touch of sweet honey, bitter chocolate and espresso on the lingering finish. Viscous, creamy mouthfeel.

Macallan’s 18 year old expression is, for me, the highlight of its regular sherried range. Deep amber in color. The nose is rich and heavily fruited: fruit cake, mulberry, a little moist gingerbread, the bloody depths of molasses. On the palate, dried fruits — more figgy than raisined — while the natural oiliness in the spirit balances the boisterous tannins from the European oak. A singed note on the finish (an extension of the molasses?) completes the picture. Balanced and complex.

Upon retasting this serious malt again recently, I was reminded why it is an international standard for malt whisky. It’s that ideal age (18); the sherry oak makes it winey/pruny/raisiny and plump and dried fruit sweet; and, jeez, I just love the daylights out of it because it’s so wonderfully decadent. This will always be in my personal pantheon of malt whisky gods. Scoop-it-out-with-a-spoon luscious and the perfect complement to the more nimble Fine Oak series.

FRUITY - An object lesson in what Sherry does to whisky. A telltale nuttiness appears right on the nose, before spice and fruit join in on the palate, with a sort of chewing gum quality. The nutty notes return in earnest on the meaty finish. Sherry casks.
