Paso Robles Cabernet Sauvignon

Paso Robles Cabernet Sauvignon | WineTransit.com

We love Paso Robles and so does Cabernet Sauvignon. The grape prefers a long growing season with warm days and cool nights, which bring just the right amount of ripeness, and a sense of freshness to the wines. Here are some favorites that showcase the region's abilities and all are under $20.

Aromas of shaved cocoa and red cherry jam meet with a bit of smoke on the nose of this widely available yet reliable bottling. There is ample tension on the sip, giving the big-boned flavors of black cherry, incense and smoke the tannic edges to cling to.

Despite a generous rasher of cocoa nibs and chocolate from the oak, there’s a cool savor to the flavors beneath, of olive and black fig and eucalyptus, with a texture that’s polished, even fleshy. It’s a lot of wine for the price.

  7. J. Wilkes Cabernet Sauvignon

A high-toned acidity keeps this wine’s notes of ripe plum and fruit nectar in line and on point.

The 2017 Cabernet Sauvignon Paso Robles Highlands District is a bold, pungent wine. Savory herbs, tobacco and cedar add a strong aromatic presence. Although a very good wine, the Cabernet is not quite as compelling as the other wines in the range, while the savory style is on the edge of being distractingly vegetal.

Deep ruby. Ripe cherry and dark berries on the nose, along with hints of licorice, vanilla and woodsmoke. Smooth and broad in the mouth, displaying good heft to the juicy blackberry, bitter cherry and fruitcake flavors. Becomes sweeter with air and finishes long and spicy, with rounded tannins coming in slowly. 10% new French oak and 5% new American oak.

Dark red-fruit aromas meet with crushed rocks on the nose of this bottling. The palate offers more fluffy strawberry flavors, with light hints of game, leather and more pulverized stones. (Matt Kettmann)
