Fino can be simple and fresh, saline and clean, but also massive and complex, a monument of a place like this Puerto Fino, the flagship of Lustau. The complexity here starts right from the scent, a cloud of salt, green apples and chalk. At first sip, its silky texture and salty almond flavor immediately entice; then, with air, a strong chalkiness emerges. The wine feels as if it is made of chalk and marine breezes. It’s a tremendous wine; get some fried sardines and touch heaven.
A brilliant sherry from Lustau, the dry, austere, intensely flavorful non-vintage Puerto Fino exhibits a light green/amber color as well as notes of crushed sea shells, hazelnuts, and spice. This is a top-notch Fino to consume over the next year.

More yellow than most finos, with a strong, oily nose of popcorn and citric essence. The palate shows roasted corn, baked apple and salted almonds, while the finish is steady yet salty. This one really grabs your tongue and taste buds; it’s forceful, and in some ways it could probably benefit from better definition.

With piercing aromas of raisin pudding, molasses and spice, this rolls out the welcome mat and more. Luscious is probably as tame as you can put it; this is a ribald sweet wine with acidic backbone and hugely intense flavors of baked brown sugar, cinnamon cake and molasses. Powerful but still racy due to bracing acidity. About as good as it gets with P.X.
The exuberant and saturated sweet flavors of sun-ripened grapes spread throughout the entire palate, sustained by firm acidity. That acidity imposes its mineral tones, without overshadowing the seductive caramel sensation that lasts. Serve it chilled as a digestif.
