Ayala specializes in dry Champagnes and this is their extreme example. It has the right amount of bottle age to soften the intense acidity and bring in some toastiness and fruit. It can be drunk now, but a few more months in bottle would make it even better.

A wine of precision and clarity, this Champagne delivers tons of Pinot character with chalky, mineral notes that float on the finish. In a world overrun by oceans of mediocre roses, Billiot’s NV Brut Rose stands apart as a wine of rare pedigree. Simply put, this is compelling juice. This bottle was disgorged on June 24, 2008. Anticipated maturity: 2008–2012.

Jacques Peters, who is now in charge of the estate, crafts one of Champagne’s best nonvintage Bruts by enriching the Yellow Label with up to 40 percent of older wines from the firm’s reserve stock. Nutty scents of yeast develop into chalkier mineral flavors as the wine opens with air. It has a fresh scent of narcissus to balance the more mature tones of its reserve wines. It’s rich enough for food, but also easy to enjoy on its own.

Bright yellow-gold. Poached pear and candied citrus fruits on the nose, which shows notes of spun sugar and toffee. Sweet orchard and pit fruit flavors are slightly cloying and loose-knit, with slow-mounting spiciness. Finishes on a warm note, with decent length and a suggestion of candied orange.

Medium to full-bodied, taut and tangy, with bracing acids and a pinpoint mousse, it’s not quite as generous as its immediate predecessors have been.

Palmer focuses its vintage wine on parcels in the premier and grand cru villages of the Montagne de Reims — the villages where the original founding growers were based. And this wine shows the concentration and supple ripeness of the 2012 harvest. All the fruit sweetness and acidity is integrated into a high-wire act of chalk-dusted tension, lasting on scents of Meyer lemon zest, spicy cider apple and undertones of earthy complexity. It feels complete and well suited to long aging.
